Sfincione Artichokes are fine as both a starter or as a main course.

Pull out the hard leaves from the artichokes and then cut them in half. Remove the hairy fibres in the centre of the artichoke, aka the choke. Keep trimming the artichoke down and then put the thin slices into a bowl of cold water with squeezed juice of a lemon.
As you wait for the artichokes to soften mix together stale bread crumbs, cheese, oregano and a touch of salt. Fry the chopped up onion with olive oil and 3 fillets of anchovies in a frying pan. Once they’re done, put the anchovies in the bowl where the bread crumbs are and add a squashed tomato. Mix the lot, until it gets a pinky colour. Add a few tablespoons of water.
Now drain the artichokes, place them in a baking pan and lay the bred crumb mix on top. Add a few pinches of salt a few drops of olive oil and bake in the oven at 160 degrees Celsius for 30 minutes.
