A perfect dish, be it a side dish or a main course.
Ingredients for 4 people:
4-5 artichokes: € 3.00

Cook thinly sliced shallots in a saucepan with a bit of water and a drop of oil. Take a spoonful of water out of the pan when the water starts to boil and put it in a frying pan. Put the frozen peas in the pan and cook them for ten minutes over low heat. Clean the artichokes to the heart and then cut it into thin slices. Slice off the top inches of the leaves.
Now, peel the potatoes and cut them into a square-like shape. Cook the potatoes, the artichokes and its leaves for fifteen minutes in the same pan you cooked the onion in. Do not add water in the sauce pan.
Prepare a béchamel sauce, or buy an already made one, and add a beaten egg yolk, artichokes and peas to it. Add salt and pepper to your liking.
Take a ceramic or aluminium pan, oil the bottom and the sides of it and sprinkle breadcrumbs all over. Lay a layer of the mix in the pan and place slices of mortadella and galbanino cheese on top. Cover everything up with what’s left of the mix and add a little grated cheese and a drizzle of olive oil. Bake the pie for about fifteen minutes at 180 degrees Celsius.
